Rosa Mitchell is a talented Italian cook who operates Yandoit Hills Winery with her husband and is heavily involved in the Melbourne chapter of Slow Food. She has worked at various establishments across the city, including Gertrude Street Enoteca. Rosa is now leading the team at Journal Canteen, located within the CAE building in the Melbourne CBD, where she is concentrating on Sicilian influenced cooking.
At Journal Canteen, Rosa cooks 'as if you've come to my place for lunch'. A daily display of excellent home-cooked style food complemented by a comprehensive list of excellent Italian wines, Rosa's menu incorporates dishes such as tempting antipasto, pastas, and her sought after ricotta fritters.
Rosa's cooking reflects her philosophy on food: 'I like people to enjoy my food. I love cooking for people - I love seeing people eat my food. It is very important to have fresh ingredients. If I have people to dinner, I don't decide what to cook till the day before, when I go to the market and see what appeals'.
