Sara-Jane Quadara started her chef’s apprenticeship in a small hotel in the Victorian rural town of Trawool Valley. She then moved to Melbourne to continue learning through an apprenticeship at Marchetti’s Latin, a highly regarded Italian institution in the city.
After completing her apprenticeship and moving to Sydney, Sara-Jane began work at Banc, under the guidance of Liam Tomlin, before moving to London to work at Petrus, a one star Michelin restaurant with Marcus Wearing. During her 4 ½ years in the U.K. Sara-Jane cooked for the Ramsey group and was part of the opening team at the Connought Hotel, as Sous chef with Angela Harnett. Continuing her travels, she moved to a small French village, Vonnas, to work at three star Michelin restaurant Blanc, with Georges Blanc, later moving on to Paul Bocuse’s in Lyon.
Since returning home Sara-Jane has been working as head chef at Giuseppe Arnaldo & Sons, and greatly enjoying her time back in Melbourne.
